What it is and what sets it apart: Differs from green defects—born in the roaster. Often uneven colour or cup faults. Named defects have their own glossary entries.

How it is done: Diagnose (RoR crash, high charge, overload, slow quench, tip/scorch visuals) → retune → blind cup → document.

Flavours and cup benefits: Avoiding defects = clean sweetness and clarity. Better QC, less waste.

Technical notes: Baking: flat/crash RoR. Tip/scorch/facing: excess drum heat contact. Quakers: pale beans that stand out when roasted. Underdeveloped: grassy despite “nice” colour.

Common mistakes: Do not always blame origin. Do not hide defects with darker roasting.
