Roast

Baking

Also known as baked roast · tueste horneado · horneado · roast baking

What it is and what sets it apart: Not always a visual burn—colour can look fine while the cup is flat/papery. Differs from scorch/tip and grassy underdevelopment.

How it is done: Avoid RoR crash → cut dead phases → retune gas after yellowing/Maillard → blind cup vs a good curve.

Flavours and cup benefits: Cup: low impact, little complexity, dry finish. Fixing baking restores sweetness and clarity.

Technical notes: Post-crack crash and endless low-heat development are classic. Log RoR, not only total time.

Common mistakes: Stretching the roast “for body” without watching RoR. Confusing baking with a stable omniroast.
