Roast

Rate of rise

Also known as ROR · rate of rise · RoR · ΔT/min

What it is and what sets it apart: RoR links applied energy to bean response. Differs from absolute temperature—same drop, different thermal stories, different cups.

How it is done: Log with bean probe + software → aim for a smooth decline after the early peak → avoid crash and post-crack flick.

Flavours and cup benefits: Stable RoR → sweetness and clarity; crash → baked/flat; flick → harsh roastiness. Benefit: diagnose profile defects.

Technical notes: Smooth RoR with averaging; don’t chase every tip. Depends on charge, density and drum/air.

Common mistakes: Do not chase a pretty RoR without cupping. Do not panic-gas after crack.
