Sensory and cupping

Persistence

Also known as length · linger · duración en boca

What it is and what sets it apart: Measures time, not only quality. Distinct from a “sweet finish”: you can have long dry bitterness.

How it’s perceived or evaluated: Mentally time 15–60 s. Agree short/medium/long as a team.

Flavours, benefits or impact: Clean length feels elegant; dirty length fatigues. Matters in milk drinks too.

Technical notes: Extraction, roast and process influence it. Log separately from intensity.

Common mistakes: Do not equate longer with better.
