Bar mise en place

What it is and what sets it apart: It prevents friction: every move has a place. Without it, workflow and clean play collapse at peak.

At the bar: Before open: dial grinder, clean groups, stock hoppers/pitchers, place cloths, check milk and menu → during service restock without breaking rhythm.

Impact on the drink: Impact: faster tickets, fewer drink errors, less stress. Also assessed in SCA exams.

Technical notes: Zones: espresso, milk, service, dirty. Label pitchers. Check stock each block.

Common mistakes: Hunting tools mid-ticket. Mixing cloths. Leaving the station “for later”.
