What it is and what sets it apart: Honey does not add bee honey—it describes sticky mucilage on parchment. It sits between washed clarity and natural intensity by dosing how much fruit ferments while drying.
How it is done: Pulp → leave more/less mucilage (white/yellow/red/black) → careful bed drying with turning → rest → hull.
Flavours and cup benefits: Panela/fruit sweetness, medium–high body, softer acidity than many washed lots. Benefit: impact with less water than fully washed.
Technical notes: “Colour” is guidance, not a fixed standard. Sticky beans need turning. Label: honey / pulped natural.
Common mistakes: Do not expect bee-honey flavour. Do not treat all honey colours as identical.
