White honey

Also known as white honey · honey blanco · miel blanco

What it is and what sets it apart: White honey leaves almost no mucilage for light sweetness with high clarity—less fruit load than yellow/red/black.

How it is done: Pulp + strong demucilage → relatively fast bed drying → rest → hull.

Flavours and cup benefits: Clarity, brighter acidity than other honeys, moderate sweetness. Benefit: bridge between washed and classic honey.

Technical notes: Less sticky than black honey; still needs turning. Label: white honey.

Common mistakes: Do not confuse with fully washed or expect black-honey body.
