Red honey

Also known as red honey · miel rojo

What it is and what sets it apart: Red honey raises mucilage load and often lengthens drying—more intensity than yellow, less extreme than black.

How it is done: Pulp → more residual mucilage → slow drying with frequent turning → hull.

Flavours and cup benefits: Red fruit, high sweetness, medium–high body, rounded acidity.

Technical notes: Higher over-ferment risk in humidity. Label: red honey.

Common mistakes: Do not dry it as fast as white honey.
