Pulped natural

Also known as pulped natural · PN · cereza despulpada seca

What it is and what sets it apart: Same axis as many honeys: fruit removed, mucilage left while drying. Brazil’s historic label; Central America often says honey.

How it is done: Cherry → pulp → dry parchment with mucilage → rest → hull.

Flavours and cup benefits: Sweetness, medium–high body, ripe fruit with more clarity than whole-cherry natural. Less water than full wash.

Technical notes: Layer control and turning matter. Label: pulped natural / honey.

Common mistakes: Do not assume it differs from honey by definition, or that it is washed.
