Tamping

Also known as tamping · tamp · prensado · tasado

Portafiltro y apisonado (tamping)

What it is and what sets it apart: Tamping densifies the bed so pressurized water flows more evenly. It does not replace distribution or fix a wrong grind.

How it’s used or measured: Distribute (WDT/level) → tamp vertical and level with consistent force → wipe rim → lock in. Log resistance and visible channeling in Brew Lab.

Flavours and cup impact: Good tamp: more even flow, fewer channels, cleaner sweetness. Crooked tamp → channels and mixed under/over notes.

Technical notes: Consistency and levelness beat chasing an exact kgf number.

Common mistakes: Tamping on a slant. Crushing harder to fix poor distribution. Knocking the portafilter after tamping.
