Grind retention

Also known as retention · retención de molienda · grinder retention

What it is and what sets it apart: Why the first shot “doesn’t count”. Internal hold-up—not only visible waste.

At the bar: Purge 1–2 g (or café protocol) after grind changes or long pauses; bellows/single-dose if relevant.

Impact on the drink: Impact: actual dose ≠ programmed; stale/inconsistent flavour in slow service.

Technical notes: Know your grinder’s typical retention. On single-dose, weigh in and out.

Common mistakes: Skipping the first grind of the day. Changing grind without purge. Mixing coffees in the hopper.

How to use

Work from a logged recipe, scale and a clean station.

Steps

  1. Prep equipment and confirm the target recipe.

  2. Perform Grind retention changing only one variable.

  3. Taste, clean and log the adjustment.

Tips

  • Prioritise hygiene and consistency over speed.
