Grinder calibration

Also known as grind adjustment · ajuste de molienda · grind dial

What it is and what sets it apart: Most-used bar lever. Differs from dose changes: same weight, different puck resistance.

At the bar: Purge retention → one step → same dose/yield → taste → iterate. Let the grinder settle after big moves.

Impact on the drink: Direct impact on sour/bitter, body and channeling. Core of daily dial-in.

Technical notes: Finer ↑ time; coarser ↓. Log setting. Clean burrs as needed.

Common mistakes: Adjusting without purge. Changing grind and dose together. Ignoring retention.

How to use

Work from a logged recipe, scale and a clean station.

Steps

  1. Prep equipment and confirm the target recipe.

  2. Perform Grinder calibration changing only one variable.

  3. Taste, clean and log the adjustment.

Tips

  • Prioritise hygiene and consistency over speed.
