Roast

Development time

Also known as development time · DT · development time ratio · DTR

What it is and what sets it apart: Differs from qualitative “development”: it’s a number. Same colour, different DT → different cups (baked vs crisp).

How it is done: Log crack start → time to drop → compute DTR. Adjust late-phase heat/air to lengthen/shorten without a flick.

Flavours and cup benefits: Short mishandled DT = sour/green; long flat RoR = toast/flat. Benefit: compare lots with data.

Technical notes: Typical DTR ~15–25%—not dogma. Also log drop temp and Agtron.

Common mistakes: Do not worship one magic %. Do not change time ignoring RoR.
