Phin

Also known as phin vietnamita · Vietnamese phin

Phin vietnamita (filtro metálico)

Phin sits on the cup: medium grind, light press with the insert, hot water, slow drip.

Intense sweet cup with condensed milk; with specialty, cleaner if you dial dose.

Try medium arabica in Cafesito—or the classic condensed milk. Don’t tamp like espresso.

Espresso-fine grind choking the drip, or boiling the brew.

How to use

Ratios, gear and steps to brew it.

Ratios and parameters

  • Dose 20–25 g
  • Water 120–150 ml + condensed milk to taste
  • Ratio ≈1:5–1:7 (strong)
  • Grind Medium (not espresso)
  • Temperature Fresh off boil (~95 °C)
  • Time 4–6 min drip

What you need

  • Vietnamese phin
  • Cup
  • Condensed milk (classic)
  • Scale (recommended)

Brewing steps

  1. Optional: condensed milk in the cup.

  2. Coffee in phin; light press with insert (no hard tamp).

  3. Bloom with a splash; wait 30–45 s.

  4. Fill remaining water; drip 4–6 min; stir and serve.

Tips

  • With specialty arabica, lower dose slightly or lengthen ratio.
  • If it won’t drip: too fine or too much press.
