What it is and what sets it apart: Fines are the fine tail of the size distribution—not the same as a “fine grind” setting. Blade grinders make more; good burrs reduce but don’t erase them.
How it’s used or measured: See them as filter sludge or fast bitterness. Mitigate with better grinder, WDT, and not grinding finer to “fix” everything.
Flavours and cup impact: Too many fines: bitterness, stall, channels. Benefit: why two “same” grinders taste different.
Technical notes: Linked to burr bimodality and espresso basket sensitivity.
Common mistakes: Blaming only temperature. Expecting clean espresso from blades. Confusing fines with fine-grind setting.
