Process / benefit

Enzymatic process

Also known as enzymatic process · enzyme wash · proceso con enzimas

What it is and what sets it apart: Differs from spontaneous ferment: directed enzymatic catalysts. Can shorten demucilage times.

How it is done: Apply enzymes to mucilage/cherry → contact time → wash → dry.

Flavours and cup benefits: Clean or sweet profiles by enzyme; less variability. Water/time efficiency vs flatness if overdone.

Technical notes: Dose and pH per datasheet. Label: enzymatic process.

Common mistakes: Enzyme ≠ always “natural”. Do not skip full rinse.
