Giling basah

Also known as giling basah · wet-hulled · wet hulling Indonesia

What it is and what sets it apart: Giling basah (“wet grinding/hulling”) is the local term for wet-hulled. Distinct timing of hulling and two-phase drying—not an automatic defect flavour.

How it is done: After pulp and short drying, wet parchment is removed and green finishes drying.

Flavours and cup benefits: Dense body, spice, cocoa, soft tobacco, restrained acidity. Sought Indonesian typicity for espresso blends.

Technical notes: Watch final moisture and storage. Label: giling basah / wet-hulled.

Common mistakes: Do not translate it as “badly washed”. Do not reject all Sumatra as “earthy” without cupping cleanliness.
