What it is and what sets it apart: Not “roasted today = best”—needs degassing and rest. Whole bean weeks ≠ ground hours.

How it is done: Buy dated → store whole, opaque, cool, dry → grind fresh → respect brew window.

Flavours and cup benefits: Lively aroma, sweetness, clarity. Stale = flat, cardboard, rancid spice.

Technical notes: Espresso often needs more rest than filter. Valves help but don’t freeze time.

Common mistakes: Do not treat strong CO₂ smell as forever-fresh. Do not store by the oven.
