Roast

Post-roast rest

Also known as rest · resting · cura post-tueste · rest days

What it is and what sets it apart: Not months of ageing—a short window. Differs from degassing (physics) as a service/cupping decision.

How it is done: Note the date → cup at days 3/7/14 → set a protocol per coffee/method → store the rest well.

Flavours and cup benefits: Improves perceived sweetness and espresso stability; filter gains clarity.

Technical notes: Specialty espresso often 7–21 days; filter sometimes from day 3–5. Density and roast matter.

Common mistakes: Do not rest forever. Do not serve day-1 espresso without intent. Rest ≠ stale.
