Lever espresso
Also known as espresso de palanca · lever espresso · Flair · Cafelat Robot · manual lever
Instead of an electric pump, the barista generates pressure with a lever or piston. Includes classic lever groups and desktop devices (Flair, Cafelat Robot…).
Stable pre-infusion and lever pace can yield very controlled texture and sweetness. It is not the same as pump espresso.
Practice dose, distribution and a repeatable pressure profile. In Cafesito start from Brew Lab “Espresso” and log the curve.
Blind lever force or too-fine grind causes channeling and bitterness. Do not skip the scale.
