What it is and what sets it apart: A brew outcome. Distinct from process fermented-sour defect (both can “bite”).

How it’s perceived or evaluated: Grind finer, extend time or raise temperature by method. Check ratio and bed/puck saturation.

Flavours, benefits or impact: Unpleasant acidity and little sweetness. Fixing restores balance and perceived body.

Technical notes: Often low yield and TDS. Confirm in cup, not only on a number.

Common mistakes: Do not always raise dose without contact time. Do not confuse with quality bright acidity.
