Sensory and cupping

Over-extraction

Also known as over-extraction · overextracted

What it is and what sets it apart: A brew outcome, not necessarily a lot defect. Distinct from dark-roast bitterness (they can stack).

How it’s perceived or evaluated: Shorten time, coarsen grind or lower temperature/dose by method. Check espresso channeling.

Flavours, benefits or impact: Immediate negative sensory impact. Fixing it restores sweetness and clarity.

Technical notes: Tied to yield % and TDS. Refractometer helps training; always validate in cup.

Common mistakes: Do not always cut dose without checking time. Do not blame the bean without dial-in.
