What it is and what sets it apart: Full City (and +) sits at the edge before true dark/oil. More Maillard/caramel than City, less bright acidity.
How it is done: Extended development after first crack → drop at early second-crack pops or just before → quench. Chocolate colour.
Flavours and cup benefits: Chocolate, caramel, nut, medium–high body; rounded acidity. Good for espresso and milk without French roast.
Technical notes: Full City+ often kisses early second crack. Calibrate by cupping, not the name alone.
Common mistakes: Do not treat Full City as “burnt”. Two Full Citys can differ widely in drop temp.
