Double washed

Also known as doble lavado · Kenya washed · double fermentation wash

What it is and what sets it apart: Differs from single fully washed by a second soak/ferment that further cleans parchment.

How it is done: Pulp → ferment 1 → wash → second ferment/soak → wash → bed dry → hull.

Flavours and cup benefits: Blackcurrant/citrus acidity, black tea, red fruit, medium body, high transparency.

Technical notes: Needs ample water and timing control. Label: double washed.

Common mistakes: Not only Kenya can double-wash. Do not confuse with wet-hulled.
